Meal Plan: July 25, 2009

Big time FAIL

We came home from New York on Sunday evening which should have been plenty of time to devise a meal plan. That night’s dinner came together ok, but it was downhill from there. S is busy at work and I’ve been really busy after work. This post about the meal plan is even a fail since it’s a week late!

The result of having NO PLAN? The bad: frozen pizza and eating out. The good: S was a  trooper and made chicken noodle soup with some old leftover roast chicken & it’s stock. He also whipped up some polenta with leftover grilled sausages and green beans from the garden.

I’m almost ashamed to post what is actually hanging on our fridge right now. Next week I’ll redeem myself.

    You are too hard on yourselves! Frozen pizza can totally count as a meal in a pinch. I mean, I’m sure it was a delicious Wegman’s za and you probably had some kind of salad on the side. Za + pizza = perfectly ok weeknight meal. 🙂

    Looking forward to the next week’s meal plan, as always! May I suggest a simple pinto bean taco salad? The idea is so simple and it barely counts as cooking, but J & I had it a few weeks ago and it’s SUCH a good idea for a busy weeknight.

    • You know me too well. It was a Wegman’s pizza and both of us arriving home after 9 is a tight pinch 🙂 It’s so much less stressful to just have a plan!

      I remember you told me about your taco salad: just layered lettuce (iceberg shredded?), pinto beans, crumbled tortilla chips, salasa, sour cream, and shredded cheese, right? That does sound good!

        Pinto Bean Taco Salad:

        Mix up torn romaine lettuce with crumbled up tortilla chips in a big bowl (or portion out into smaller bowls for serving).

        In microwave-able bowl, put drained and rinsed can of pinto beans & 1/4 – 1/2 cup salsa and heat up for a minute. Take out of microwave and stir in chopped up tomatoes, corn, and avocado.

        Spoon out bean mixture on top of romaine/tortilla mixtures. Top with more salsa (if desired), shredded pepper jack cheese (if desired), and dollaps of sour cream.

        So easy…yet so tasty.
