My omelets have more filler than egg, so when I flip them they look more scrambled than anything else. I used the rest of the turnip and mustard greens, then tore up one last slice of Swiss cheese over the top. Ate it with hot sauce and lots of toasted crusty bread.

I was visiting a friend this weekend and just didn’t feel like doing a meal plan yesterday. Sunil’s also busy with work this week, so I didn’t really even need much of a plan. Instead of a regular plan-then-store Sunday, I just stopped by a small store on my way back from Delaware and bought a bunch of veggies.
Last night I made a salad with apple, goat cheese, and pumpkin seeds. Tonight I made pasta with sautéed greens (turnip & mustard mixture from a bag) and cherry tomatoes. I’ll see what I feel like tomorrow… Probably another salad.
